Kanwal’s Healthy Corner – Gajar Ka Pudding (Carrot Pudding)
As the cold days make their way in, sometimes all one wants is to cozy up to a warm bowl of pudding. I’ve made my own healthy recipe for a sweet carrot pudding. I’ve combined the two wonderful worlds of pudding and gajar ka halwa and came up with Gajar Pudding. Of course I’ve added my own twist and in this case have made it much healthier than tradtional indian sweets! This pudding is sweet, but not too sweet and can even be had for breakfast on a cold day.
INGREDIENTS
- 1 bag of carrots, peeled and shredded
- 1 TB. of yogurt butter (Brummel and Brown makes a great one)
- 1/4c. sugar
- 1 TB. of cardamom powder
- 1c. of brown rice, cooked and pureed
- 1/2c. of fat free ricotta cheese
- 4c. of skim plus milk, or 1% milk
- 1/4c. of slivered almonds
- 1/4tsp. of rose water
PREPARATION
Add the butter in a pot. Turn your stove on to medium heat and add the shredded carrots. Saute until carrots have softened. Pour the milk in and bring to a boil. Add the sugar and pureed rice. Stir until rice has thickened the milk. Add the ricotta and cardamom powder, continue to stir until this has thickened. Add the rose water and almonds. Continously stir this until the pudding has thickened.
