Kanwal’s Healthy Corner – Whole Wheat Pasta Medley

Having a nutritious meal should be the goal every time you sit down and eat. Making a quick and nutritious meal is ideal. Also, sometimes the natural flavors of the food you are cooking with are all you need in a dish. This is what I was thinking with my Whole Wheat Pasta Medley dish. Seared, thin slices of garlic enhance the sweetness the bell pepper offers and infuses the broccoli. Just a splash of good balsamic vinegar helps bring out the flavors of the vegetables while the grape tomatoes provide their own ‘sauce’. This reminds us all to eat nutritious and delicious food from the earth.


  • 13oz. of whole wheat rotini pasta, cooked
  • 1TB. of extra virgin olive oil
  • 4 cloves of garlic, thinly sliced
  • 1 yellow bell pepper, diced
  • 1/2 head of broccoli florets
  • 1 pint of grape tomatoes
  • 1TB. of fresh oregano
  • 2TB. of balsamic vinegar
  • Salt/pepper to taste
  • Shredded pecorino romano, to top


In a large sauté pan, add the olive oil and place on medium heat. Once hot, add the garlic slices, bell pepper and broccoli. Let the vegetables brown on both sides, about 5 minutes. Add the cherry tomatoes, oregano, balsamic vinegar and stir for about a minute. Add the pasta and toss. Top with the Pecorino Romano cheese.

Servings: 7


This dish makes 7 huge servings. I had a serving for dinner and brought some for lunch the next day. I then individually froze the remainder 5 servings. Next time I’m working late, I will have a quick and easy dinner that just needs to be warmed up!
