Kanwal’s Healthy Corner – Simple Greek Omelet
There is nothing better than starting your day off with a delicious, nutritious breakfast. I also feel you get the most nutritional bang for your buck when you eat your eggs in the morning. Filled with healthy fats and protein, along with a chock full of vitamins and minerals, you know you can’t go wrong. Also, eggs are so versatile, you can boil them, scramble, poach and even make an omelet. My most flavorite type of omelet is a Greek omelet. Packed with flavor and nutrients, you can’t go wrong. I hope you enjoy my recipe below for my Simple Greek Omelet.
Ingredients:
- 1 whole egg and one egg white, cracked in a bowl
- 2 tsp. canola oil
- Salt/freshly ground pepper, as needed
- Half a beefsteak tomato, thinly sliced
- 1/4 c. chopped spinach
- A sprinkle of feta cheese
Preparation:
Add the canola oil in a sauté pan and place on medium heat. While this is getting hot, add the salt/pepper in the bowl with the eggs and whip. Pour the egg mixture in the pan and turn heat to low. On one half of the egg place a few of the sliced tomatoes, spinach and feta. Fold the other half of the omelet over and cook for 30 seconds and then flip over and cook for another30 seconds, or until the omelet is cooked through. Take omelet out of pan and plate. Top with more sliced tomatoes and feta.
Enjoy with a slice of whole wheat toast.
