Kanwal’s Healthy Corner – Stuffed Chicken Scallopini

Sometimes it’s nice to have a hot, hearty dish without all the calories! I’m not too much of a red meat eater but I love getting my protein from chicken. What’s even better is chicken stuffed with chicken and veggies! My recipe for Stuffed Chicken Scallopini is certainly much healthier than KFC and will keep you full and satisfied. Enjoy the recipe below with a salad or roasted veggies of your choice!

Ingredients:

One pound of very thinly sliced chicken breast (the kind used for Scallopini)
One package of small chicken sausage (already cooked)
One pound of asparagus, woody stalks removed
One cup of shredded mozzarella
One cup of marinara sauce
Salt/pepper/garlic powder to season

Preparation:

Season chicken breast with the salt/pepper and garlic powder. Take one slice of chicken breast and place sausage, three stalks of asparagus and a tablespoon of cheese, on top. Carefully roll the chicken breast to close it with the ingredients. Place in a baking dish, fold side down. Repeat with remainder ingredients. Once all the chicken is rolled and in the baking dish, top each chicken piece with the marinara sauce and shredded mozzarella. Turn your oven on to 375 degrees. Cover the dish with foil. Bake in the oven for 25 minutes.
