Kanwal’s Healthy Corner – Easy Whole Wheat Chili Mac

by Kanwal Ullah

On a cold, rainy day you really don’t want to come home to a big cold plate of salad! At the same time, you don’t want to come home and slave over a pot of chili or eat a heavy pasta dish. I have the perfect solution:  My Easy Whole Wheat Chili Mac. This dish can be made in half an hour and is healthy, filling, warm and comforting! You get your fiber from the beans, healthy carbs from the whole wheat pasta and protein from the lean beef. The best part is, you can make a big pot of this and have left overs! Enjoy this recipe on a cold, windy, rainy day!

  • 8 oz. whole wheat macaroni
  • 1 15.5 oz. can of low sodium red kidney beans, drained and rinsed
  • 1 tsp. canola oil
  • ½ onion, diced
  • 3/4 lb. lean ground beef
  • 1 packet of taco or chili seasoning
  • Shredded cheese for topping

Cook macaroni according to directions on the box. Add the oil to a sauté pan and place on medium heat. Once hot, add the onion sauté until browned, and then add the beef, stirring  until cooked. Add the seasoning packet to the beef and stir to combine. Add the beans and macaroni. Stir carefully to combine. Once combined, divide into four bowls and top with some shredded cheese. Enjoy!
