Kanwal’s Healthy Corner — Peanut Butter Muffins

Looking at my raw recipe from two weeks ago, I thought I’d give you guys a baked good that was not too savory or too sweet. With this in mind I made a simple BASIC recipe for peanut butter muffins. If you look at the ingredient list, you will see there is no added sugar. I usually like my breakfasts and snacks to be on the less sugary side, so these peanut butter muffins are perfect! The only sugar in this recipe is what is in the peanut butter. Of course, if this recipe does not suit your sweet tooth, you can always add one cup of sugar. I absolutely love these muffins with some jam on top!
Ingredients:
- 1c of peanut butter (creamy or chunky)
- 1TB of baking powder
- 1 egg
- 1c of oats
- 1c of water
Preparation:
Preheat your oven to 350 degrees. In a large bowl, combine ingredients and stir well. Pour batter into an ungreased muffin tin. Bake for 30 minutes. Allow to cool before devouring.
Enjoy these muffins by splitting them in half and adding your favorite jam on top!
Makes 12 medium muffins, 8 large muffins.
