Kanwal’s Healthy Corner – Eid Mubarak

The holy month of Ramadan is coming to an end and soon there will be celebrations for Eid. Eid… a wonderful day to enjoy the foods we love with our loved ones. My most favorite foods for Eid are the silky vermicelli noodles in seivyan and the thick richness of kheer. Maybe this is because of the big sweet tooth I have, but these dishes are certainly staples at my house during the Eid and I’d love to share these recipes for you. I hope you enjoy the recipes below. I love both of these when they are served a bit warm.

1tsp. of canola oil
1 package of dry vermicelli noodles
1/2 gallon of skim plus milk
½ cup of granulated sugar
3 cardamom pods
2 teaspoons of cardamom powder

Heat the canola oil in a pan, on medium heat
Add the dry vermicelli and fry until golden brown, stirring continuously
Add the milk, sugar, cardamom pods and cardamom powder
Bring the heat to low, and simmer until the milk has thickened and the vermicelli has fully cooked

KHEER (Indian/Pakistani Rice Pudding)

4 cups of whole milk
2 cups of water
1 cup basmati rice
1 cup condensed milk
1/2 cup sugar
¼ cup of raisins
¼ cup of slivered almonds
1 teaspoon cardamom powder
1 teaspoon of rose water

Boil the rice in the milk and water on a medium flame until the rice is cooked. Make sure you stir frequently to avoid scalding the milk on the bottom of your pot. Add the condensed milk, sugar, raisins, and almonds. Stir till the sugar dissolves and the mixture thickens. Add the cardamom and rose water and serve hot. Enjoy!!
