Kanwal’s Healthy Corner: Cajun Shrimp

Grilling season is at its peak but you don’t need to stick to just chicken and burgers. Seafood is a great option when grilling! One of my favorite sea foods to grill is shrimp. Low in fat and calories, shrimp grills incredibly fast and is very tasty with the right seasonings. Lately, I’ve been into Cajun seasoning. There are lots of varieties of Cajun seasoning out there! But why buy some when you can easily make your own? Below is a simple recipe for Cajun Shrimp. Next time you have a grill party, surprise your guests with this wonderful Cajun Shrimp!

Ingredients:

  • 1 lb shrimp, peeled and deveined
  • 1 tsp. sugar
  • 2 TB. canola oil
  • 2 tsp. paprika
  • 2 tsp. thyme
  • 2 tsp. allspice
  • 1 tsp. salt

Preparation:

Place shrimp in large bowl. Add the sugar, canola oil, paprika, thyme, all spice and salt. Toss to coat evenly. Skewer seasoned shrimp and grill for five minutes on each side. Enjoy with salsa and veggies on the side or make a lettuce wrap (lettuce leaf, shrimp and salsa all wrapped up).

Special note: Always wet the skewers if you are using wooden ones, so they don’t burn on the barbecue.
