Kanwal’s Healthy Corner: My Thanksgiving Menu

By Kanwal Ullah

It’s that time of year again where the holiday cheer is in the air and families are getting together for fun filled food nights, exchanging presents and laughter and joy surrounding us. The first of the major holidays is right around the corner. Thanksgiving which focuses on good food, friends and family is a holiday that brings many people together. My favorite part of Thanksgiving is cooking all the food for the big night. I love waking up, prepping the kitchen and having the parade on TV in the background while I work on the delicious turkey, sides and desserts. Ah, for me, staying in the kitchen and cooking all day is heaven!

So, you ask, what’s on the menu this year? Here it is:

Pre-Course:
Butternut Squash Soup
Salad
Crescent Rolls

Main Course:
Turkey

Sides:
Roasted Veggies (zucchini, squash, eggplant, red bell pepper)
Mashed Potatoes
Oven baked sweet potatoes
Roasted Brussels sprouts
Sauteed string beans
Stuffing
Cranberry sauce
Gravy

Dessert:
Pumpkin mousse
Apple Pie
Vanilla ice cream, whipped cream for toppings

Sure, a lot of these items I will be making from scratch. I do, however get some help from packaged super market goods. For example, the crescent rolls. I LOVE making the Pillsbury crescent rolls. Even though this is store bought, it still tastes like a classic. I use to make my cranberry sauce from scratch. Now, I buy all natural cranberry sauce from Trader Joe’s and jazz it up with orange zest, ginger and a couple of cloves. Yes, store bought, with a homemade flare.

I want to know… what’s on your Thanksgiving menu this year?

P.S. Nina wants to add that a deliciously basic recipe for making this year’s roast turkey can be found at SeriousEats.com, courtesy of Alton Brown, on whose great kindness we also rely for the use of the image above!
