Kanwal’s Healthy Corner — Thai Red Curry

Do you feel making your own Thai curry would be a complicated matter? It’s not. Trust me, with the help of some Thai curry paste, you can make your own, authentic tasting Thai curry. Bring the flavors of Thailand into your home by cooking this easy, flavorful dish.

Ingredients:

  • 1TB of canola oil
  • 1/2 green bell pepper, diced
  • 1/2 onion, diced
  • 1/4c of Thai red curry paste
  • 3/4lb of diced cooked chicken or tofu (protein)
  • 1 can of light coconut milk
  • 1tsp of salt
  • Cilantro, roughly chopped, for garnish

Preparation:

In a sauce pan, add the oil and place on medium heat. Add the green pepper and onions. Sauté until onions have browned. Add the Thai curry paste and stir. Stir in the coconut milk. Stir in the protein. Allow sauce to simmer for 15 minutes. Garnish with cilantro. Serve with brown rice. Enjoy!
